Ful Medames (Fava Bean Stew) with Pita Bread

Ingredients

  • 2 cans (15oz) Fava beans
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 medium Tomato
  • 1/2 tsp Cumin
  • 2 tbsp Lemon juice
  • 2 tbsp Olive oil
  • 4 pieces Whole wheat pita bread

Instructions

  1. 1Dice the onion and mince the garlic. Chop the tomato.
  2. 2Heat the olive oil in a pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. 3Add the tomato and cumin. Cook for 2 minutes, stirring constantly.
  4. 4Drain and rinse the fava beans. Add them to the pot along with 1/2 cup of water. Bring to a simmer and cook for 10 minutes, or until heated through.
  5. 5Stir in the lemon juice.
  6. 6Serve hot with whole wheat pita bread.
