Ingredients

  • 2 cans Fava Beans (canned)
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 medium Tomato
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Cumin
  • 2 tablespoons Olive Oil
  • 1/4 cup Dairy-Free Yogurt or Tahini
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. 1Heat olive oil in a saucepan over medium heat.
  2. 2Add chopped onion and garlic and cook until softened, about 5 minutes.
  3. 3Add diced tomato and cook for another 5 minutes.
  4. 4Rinse and drain the fava beans and add them to the saucepan.
  5. 5Stir in cumin, lemon juice, salt, and pepper.
  6. 6Simmer for 20 minutes, stirring occasionally, until the flavors have melded.
  7. 7Mash some of the fava beans with a fork to create a thicker consistency.
  8. 8Serve warm, topped with dairy-free yogurt or tahini.
