Ingredients

  • 1 lb Dried black beans
  • 8 cups Water
  • 2 tbsp Olive oil
  • 1 medium Onion
  • 1/2 medium Green bell pepper
  • 3 cloves Garlic
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 leaf Bay leaf
  • 1 tbsp Vinegar
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Rinse dried black beans and remove any debris.
  2. 2Place beans in a large pot and cover with 8 cups of water. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until beans are tender.
  3. 3Heat olive oil in a skillet over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.
  4. 4Add garlic, cumin, and oregano to the skillet and cook until fragrant, about 1 minute.
  5. 5Add the skillet mixture to the pot of beans. Stir in bay leaf, vinegar, salt, and pepper.
  6. 6Simmer for another 30 minutes to allow the flavors to meld.
  7. 7Remove bay leaf before serving.
