Foul Mudammas (Saudi Fava Bean Stew - Gluten-Free)

A classic Middle Eastern breakfast of stewed fava beans, seasoned with garlic, lemon, and olive oil. This version is naturally gluten-free.

Ingredients

  • 2 15-ounce cans Canned Fava Beans
  • 4 cloves Garlic
  • 3 tablespoons Lemon Juice
  • 4 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 0.25 teaspoon Chili Flakes (Optional)
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh Parsley
  • 1 medium Chopped Tomatoes

Instructions

  1. 1Drain and rinse the fava beans.
  2. 2In a pot, mash some of the fava beans to create a thicker consistency. Leave some whole for texture.
  3. 3Add minced garlic, lemon juice, olive oil, cumin, chili flakes (if using), and salt.
  4. 4Heat over medium heat, stirring occasionally, until warmed through, about 10 minutes.
  5. 5Garnish with fresh parsley and chopped tomatoes.
  6. 6Serve with gluten-free bread or on its own.
