Ingredients

  • 1 lb Fava Beans
  • 2 medium Tomato
  • 3 cloves Garlic
  • 2 tbsp Lemon Juice
  • 2 tbsp Olive Oil
  • 1 tsp Cumin Powder
  • 1/4 tsp Chili Flakes
  • 2 tbsp Fresh Parsley

Instructions

  1. 1Soak the fava beans in water overnight.
  2. 2Drain the fava beans and place them in a pot. Cover with fresh water and bring to a boil. Reduce heat and simmer for 1-2 hours, or until the beans are tender.
  3. 3In a separate pan, heat olive oil over medium heat. Sauté garlic until fragrant.
  4. 4Add diced tomatoes, cumin powder, and chili flakes (if using). Cook for 5 minutes.
  5. 5Add the cooked fava beans to the tomato mixture. Stir in lemon juice and salt to taste.
  6. 6Garnish with fresh parsley and serve warm.
