Ingredients

  • 0.5 cup rolled oats
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1.25 cups unsweetened plant-based milk
  • 3 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries
  • 1 tablespoon lemon juice

Instructions

  1. 1In a large bowl, whisk together the flour, rolled oats, sugar, baking powder, and salt.
  2. 2In a separate bowl, whisk together the plant-based milk, vegetable oil, and vanilla extract.
  3. 3Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. 4For the compote: In a small saucepan, combine the mixed berries and lemon juice. Cook over medium heat, stirring occasionally, until the berries break down and the sauce thickens slightly, about 5-7 minutes.
