Fluffy Oat Pancakes with Berry Compote

Ingredients

  • 2 cups Oat flour
  • 2 tsp Baking powder
  • 0.5 tsp Salt
  • 2 cups Unsweetened plant-based milk
  • 2 tbsp Maple syrup
  • 2 tbsp Vegetable oil
  • 3 cups Mixed berries (fresh or frozen)
  • 1 tbsp Lemon juice
  • 1 tbsp Sugar (optional, for compote)
  • 1 tbsp Cooking oil (for griddle)

Instructions

  1. 1In a large bowl, whisk together the oat flour, baking powder, and salt.
  2. 2In a separate bowl, whisk together the plant-based milk, maple syrup, and vegetable oil.
  3. 3Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
  4. 4For the berry compote: Combine the mixed berries, lemon juice, and optional sugar in a small saucepan.
  5. 5Cook over medium heat, stirring occasionally, until the berries break down and the sauce thickens, about 8-10 minutes. Set aside.
  6. 6Heat a lightly oiled griddle or non-stick skillet over medium heat.
  7. 7Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  8. 8Cook for 2-3 minutes per side, or until golden brown and cooked through.
  9. 9Serve the pancakes warm, topped with the berry compote.
