Ingredients

  • 1.5 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 1.25 cups Unsweetened plant-based milk
  • 3 tablespoons Melted refined coconut oil or vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Apple cider vinegar

Instructions

  1. 1In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  2. 2In a separate medium bowl, whisk together the unsweetened plant-based milk, melted refined coconut oil or vegetable oil, vanilla extract, and apple cider vinegar.
  3. 3Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
  4. 4Heat a lightly oiled griddle or non-stick frying pan over medium heat.
  5. 5Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  6. 6Cook for about 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles appear on the surface.
  7. 7Serve immediately with your favorite dairy-free toppings.
