Fitfit (Injera Scramble)

Torn pieces of injera bread tossed with spiced clarified butter, berbere, and sometimes vegetables. A quick and flavorful breakfast dish.

Ingredients

  • 4 pieces Injera bread
  • 3 tbsp Ethiopian spiced clarified butter (Niter Kibbeh)
  • 1 tsp Berbere spice blend
  • 0.5 medium Onion
  • 1 medium Tomato
  • 1 small Green chili

Instructions

  1. 1Tear the 4 pieces of Injera bread into bite-sized pieces. Place the torn injera into a large bowl.
  2. 2Finely chop the 0.5 medium Onion, the 1 medium Tomato, and the 1 small Green chili. Place the chopped vegetables in a small bowl.
  3. 3Heat 3 tablespoons of Ethiopian spiced clarified butter (Niter Kibbeh) in a 12-inch skillet over medium heat (350°F / 175°C).
  4. 4Add the chopped 0.5 medium Onion to the hot skillet and cook for 3 to 5 minutes, stirring occasionally, until the onion pieces look translucent and feel soft when poked.
  5. 5Add the chopped 1 medium Tomato and the chopped 1 small Green chili to the skillet. Cook for 2 more minutes, stirring, until the tomato pieces begin to soften.
  6. 6Add the torn 4 pieces of Injera bread and 1 teaspoon of Berbere spice blend to the skillet with the cooked vegetables.
  7. 7Toss everything together gently for 1 to 2 minutes, until the injera is evenly coated with the spices and butter and heated through. The injera should be warm and slightly softened.
  8. 8Serve the Fitfit immediately.
