Ingredients

  • 1 lb Dried black beans
  • 1 lb Pork shoulder
  • 8 oz Smoked sausage (pork or chicken)
  • 4 slices Bacon
  • 1 medium Onion
  • 4 cloves Garlic
  • 2 Bay leaf
  • 1 Orange
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Soak the black beans in water overnight.
  2. 2Drain the black beans and place them in a large pot.
  3. 3Add pork shoulder, smoked sausage, bacon, onion, garlic, bay leaf, and the juice of one orange.
  4. 4Cover with water and bring to a boil.
  5. 5Reduce heat and simmer for 2 hours, or until the beans and meat are tender.
  6. 6Remove the pork shoulder and bacon from the pot and shred the meat.
  7. 7Return the shredded meat to the pot and stir well.
  8. 8Season with salt and pepper to taste.
  9. 9Serve with rice and sliced oranges.
