Feijão Tropeiro (Miner's Beans)

Ingredients

  • 3 cups Dried Pinto Beans, cooked
  • 4 slices Bacon, chopped
  • 1 cup Brazilian Sausage (Linguiça), chopped
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Collard Greens, thinly sliced
  • 2 large Eggs, scrambled
  • 1/2 cup Cassava Flour
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1In a large skillet or pot, cook bacon until crispy. Remove bacon and set aside, reserving bacon fat in the pot.
  2. 2Add sausage to the pot and cook until browned. Remove sausage and set aside.
  3. 3Add onion and garlic to the pot and sauté until softened, about 5 minutes.
  4. 4Stir in the collard greens and cook until wilted, about 3 minutes.
  5. 5Add the cooked beans, bacon, sausage, and scrambled eggs to the pot.
  6. 6Stir in the cassava flour and cook for another 5 minutes, or until everything is well combined.
  7. 7Season with salt and pepper to taste. Serve hot.
