Fava Dip with Grilled Pita

Ingredients

  • 1 cup Fava Beans (split peas)
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 3 cups Vegetable Broth
  • 2 tablespoons Lemon Juice
  • 3 tablespoons Olive Oil
  • 4 pieces Pita Bread
  • 1/4 cup Fresh Parsley
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Measure the 1 cup of Fava Beans (split peas) into a fine-mesh sieve and rinse them under cool running water.
  2. 2Finely chop the 1/2 medium Onion and mince the 2 cloves Garlic. Place a large heavy-bottomed pot over medium heat. Add 1 tablespoon of the 3 tablespoons Olive Oil to the pot. Once the oil is shimmering, add the chopped onion and minced garlic. Cook, stirring frequently, for 5-7 minutes, or until the onion is softened and translucent, and the garlic is fragrant but not browned.
  3. 3Add the rinsed 1 cup of Fava Beans (split peas) and the 3 cups of Vegetable Broth to the pot with the onions and garlic. Increase the heat to high and bring the mixture to a rolling boil. Once boiling, immediately reduce the heat to low, cover the pot, and let it simmer gently for 30-40 minutes. The beans are ready when they are very tender and can be easily mashed with a fork.
  4. 4Remove the pot from the heat. Carefully use an immersion blender to blend the contents of the pot directly in the pot until the mixture is completely smooth and creamy. If you do not have an immersion blender, you can carefully transfer the mixture in batches to a regular blender and blend until smooth, then return it to the pot.
  5. 5Stir the 2 tablespoons of Lemon Juice, 1/2 teaspoon of Salt, and 1/4 teaspoon of Black Pepper into the smooth fava bean mixture. Taste and add more salt or pepper if desired, but do not add more than the amounts listed.
  6. 6Prepare the 4 pieces of Pita Bread. Brush each piece lightly on both sides with the remaining 2 tablespoons of Olive Oil. Heat a grill pan or outdoor grill to medium-high heat (approximately 400°F or 200°C). Place the oiled pita bread on the hot grill. Grill for 2-3 minutes per side, or until the pita is warm, slightly puffed, and has developed light char marks.
