Ingredients

  • 1 cup Dried Fava Beans
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1/4 cup Olive Oil
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Fresh Dill
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 4 pieces Pita Bread

Instructions

  1. 1Soak fava beans in water for at least 4 hours or overnight.
  2. 2Drain and rinse the fava beans. Add to a pot, cover with water and boil until tender (about 1 hour).
  3. 3Sauté onion and garlic in olive oil until softened.
  4. 4In a food processor, combine fava beans, sautéed onion and garlic, lemon juice, dill, salt, and pepper.
  5. 5Blend until smooth and creamy.
  6. 6Cut pita bread into triangles. Brush with olive oil and bake at 350°F (175°C) for 10-12 minutes, or until golden brown and crispy.
  7. 7Serve fava bean dip with toasted pita chips.
