Ethiopian Spiced Teff Porridge

Ingredients

  • 1 cup Teff flour
  • 4 cups Water
  • 1/2 cup Coconut Milk
  • 2 tbsp Coconut oil
  • 1/2 tsp Cardamom
  • 1/4 tsp Cinnamon
  • 1/4 tsp Salt
  • 2 tbsp Agave nectar

Instructions

  1. 1In a medium saucepan, heat the 2 tablespoons of coconut oil over medium heat (350°F / 175°C). Add the 1/2 teaspoon of cardamom and 1/4 teaspoon of cinnamon. Cook, stirring constantly, for about 30 seconds until you can smell their fragrance.
  2. 2Add the 1 cup of teff flour to the saucepan. Stir continuously for 1 to 2 minutes, allowing the teff flour to lightly toast. This step helps develop its flavor.
  3. 3Gradually whisk in the 4 cups of water and the 1/2 cup of coconut milk. Keep whisking as you add them to ensure there are no lumps and the mixture is smooth.
  4. 4Bring the mixture to a gentle simmer over medium heat. Once simmering, reduce the heat to low, cover the saucepan, and cook for 15 to 20 minutes. Stir frequently to prevent sticking and ensure the porridge thickens evenly. It is done when it has a thick, porridge-like consistency.
  5. 5Remove the saucepan from the heat. Stir in the 1/4 teaspoon of salt and the 2 tablespoons of agave nectar until fully combined. Taste the porridge and add a little more agave nectar if you prefer it sweeter.
  6. 6Serve the Ethiopian spiced teff porridge hot.
