Ingredients

  • 2 medium Sweet potatoes
  • 2 tablespoons Olive oil
  • 1 tablespoon Berbere spice blend
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Salt

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Peel the 2 medium sweet potatoes. Cut each sweet potato lengthwise into sticks that are 1/4 to 1/2-inch thick.
  3. 3In a large bowl, combine the cut sweet potato sticks with 2 tablespoons of olive oil, 1 tablespoon of berbere spice blend, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of salt.
  4. 4Toss the sweet potato sticks thoroughly in the bowl until they are completely coated with the oil and spices. Spread them in a single layer on a large baking sheet, making sure no pieces overlap.
  5. 5Bake in the preheated oven for 20 to 25 minutes. After 10 to 12 minutes, carefully flip all the sweet potato sticks over. Continue baking until they are tender when pierced with a fork and have slightly crispy edges.
