Ethiopian Spiced Chickpea Scramble (Shiro)

Ingredients

  • 2 cups Chickpeas (canned, drained)
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 2 tablespoons Berbere Spice Blend
  • 1/2 cup Vegetable Broth
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoons Chopped Cilantro (for garnish)

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add chopped onion and cook until softened, about 5 minutes.
  3. 3Add minced garlic and cook for another minute until fragrant.
  4. 4Stir in the berbere spice blend and turmeric powder. Cook for 30 seconds, stirring constantly, to bloom the spices.
  5. 5Add the drained chickpeas and vegetable broth. Bring to a simmer.
  6. 6Reduce heat to low, cover, and cook for 10-15 minutes, or until the chickpeas are heated through and the sauce has thickened slightly.
  7. 7Season with salt and black pepper to taste.
  8. 8Garnish with chopped cilantro before serving.
