Ingredients

  • 1 cup Red lentils
  • 3 cups Water
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 tablespoon Ginger
  • 2 tablespoons Berbere spice blend
  • 2 tablespoons Tomato paste
  • 2 tablespoons Vegetable oil
  • 1/2 teaspoon Salt

Instructions

  1. 1Rinse the red lentils in a fine-mesh sieve.
  2. 2Heat vegetable oil in a pot over medium heat. Add onion and cook until softened, about 5 minutes.
  3. 3Add garlic and ginger and cook for 1 minute more.
  4. 4Stir in berbere spice blend and tomato paste. Cook for 1 minute, stirring constantly.
  5. 5Add rinsed lentils and water. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until lentils are tender and the stew has thickened.
  6. 6Season with salt to taste.
  7. 7Serve hot with rice.
