Ethiopian Lentil Stew (Misir Wot)

Ingredients

  • 1 cup Red lentils
  • 3 cups Water
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 tbsp Ginger
  • 2 tbsp Berbere spice blend
  • 2 tbsp Vegetable oil
  • 1 tbsp Tomato paste
  • 1/2 tsp Salt

Instructions

  1. 1Rinse the red lentils in a fine-mesh sieve.
  2. 2Heat vegetable oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute more.
  3. 3Stir in berbere spice blend and tomato paste. Cook for 1 minute until fragrant.
  4. 4Add red lentils and water to the pot. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender and the stew has thickened.
  5. 5Season with salt to taste. Serve hot with a gluten-free flatbread.
