Ethiopian Lentil Stew (Misir Wot)

Ingredients

  • 1 cup Red Lentils
  • 1 large Onion
  • 4 cloves Garlic
  • 2 tbsp Berbere Spice Blend
  • 2 tbsp Tomato Paste
  • 4 cups Vegetable Broth
  • 3 tbsp Vegetable Oil
  • 1 tsp Salt
  • 4 pieces Injera Bread

Instructions

  1. 1Rinse the red lentils in a fine-mesh sieve under cold water.
  2. 2In a pot, heat vegetable oil over medium heat. Add finely chopped onion and sauté until softened, about 7 minutes.
  3. 3Add minced garlic and berbere spice blend. Sauté for another minute until fragrant.
  4. 4Stir in tomato paste and cook for 2 minutes.
  5. 5Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  6. 6Season with salt to taste. Serve hot with injera bread.
