Ethiopian Lentil Stew (Misir Wot)

A richly spiced and flavorful Ethiopian lentil stew, traditionally served with injera. Great served with rice as well.

Ingredients

  • 1.5 cups Red lentils
  • 4 cups Water
  • 2 medium Onion
  • 4 cloves Garlic
  • 2 tbsp Berbere spice blend
  • 2 tbsp Tomato paste
  • 3 tbsp Vegetable oil
  • 0.5 tsp Salt

Instructions

  1. 1Rinse red lentils in a fine-mesh sieve.
  2. 2Heat vegetable oil in a large pot over medium heat.
  3. 3Add finely chopped onions and cook until softened and golden brown, about 10 minutes.
  4. 4Add minced garlic and cook for another minute.
  5. 5Stir in berbere spice blend and tomato paste and cook for 1 minute, stirring constantly.
  6. 6Add red lentils and water. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until lentils are tender.
  7. 7Season with salt to taste. Serve hot with rice.
