Ethiopian Lentil Stew (Misir Wot)

Ingredients

  • 1 cup Red lentils
  • 1 large Onion
  • 3 cloves Garlic
  • 2 tbsp Berbere spice blend
  • 2 tbsp Tomato paste
  • 2 cups Vegetable broth
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 4 pieces Injera bread

Instructions

  1. 1Rinse red lentils in a colander.
  2. 2Finely chop onion and mince garlic.
  3. 3Heat olive oil in a pot over medium heat.
  4. 4Add onion and garlic and sauté until softened.
  5. 5Stir in berbere spice blend and tomato paste and cook for 1 minute.
  6. 6Add red lentils and vegetable broth. Bring to a simmer.
  7. 7Cover and simmer for 30 minutes, or until lentils are tender and the stew has thickened.
  8. 8Season with salt to taste.
  9. 9Serve hot with injera bread.
