Ingredients

  • 2 cups All-Purpose Flour
  • 0.5 cup Water
  • 0.25 cup Vegetable Oil
  • 0.5 tsp Salt
  • 1 cup Brown or Green Lentils
  • 0.5 cup Onion
  • 2 cloves Garlic
  • 1.5 tbsp Berbere Spice Mix
  • 0.5 cup Vegetable Broth

Instructions

  1. 1Prepare the dough: In a bowl, combine flour, water, vegetable oil, and salt. Knead until smooth. Cover and let rest for 20 minutes.
  2. 2Cook the lentils: Rinse lentils and cook in vegetable broth until tender but not mushy. Drain any excess liquid.
  3. 3Prepare the filling: Sauté chopped onion and garlic until softened. Add berbere spice mix and cook for another minute.
  4. 4Combine lentils and sautéed spices. Season with salt to taste.
  5. 5Preheat oven to 375°F (190°C).
  6. 6Roll out the dough and cut into circles or squares.
  7. 7Place a spoonful of lentil filling in the center of each dough piece.
  8. 8Fold the dough over to form a triangle or rectangle, sealing the edges with water.
  9. 9Bake for 20-25 minutes, or until golden brown.
