Ethiopian Barley Porridge (Genfo) with Spiced Butter

Ingredients

  • 1 cup Barley Flour
  • 4 cups Water
  • 1/4 teaspoon Salt
  • 1/2 cup Vegan Butter
  • 1 tablespoon Berbere Spice Blend
  • 1/2 teaspoon Ginger (ground)
  • 1 clove Garlic (minced)

Instructions

  1. 1In a large heavy-bottomed pot, combine the 4 cups of water and the 1/4 teaspoon of salt, and bring to a rolling boil over high heat (212°F / 100°C).
  2. 2While the water is heating, prepare the spiced vegan butter. In a small saucepan, melt the 1/2 cup of vegan butter over medium heat (300°F / 150°C).
  3. 3Once the water is boiling, slowly whisk in the 1 cup of barley flour, making sure to incorporate it smoothly to avoid any lumps. Reduce the heat to low (180°F / 82°C).
  4. 4Continue to cook the porridge, stirring constantly with a whisk or wooden spoon, for 20 minutes. The porridge is ready when it has thickened to a smooth, creamy consistency.
  5. 5To the melted vegan butter, add the 1 tablespoon of berbere spice blend, the 1/2 teaspoon of ground ginger, and the 1 clove of minced garlic. Stir these ingredients together and cook over medium heat (300°F / 150°C) for 1 to 2 minutes, until the mixture is very fragrant.
  6. 6To serve, divide the thick barley porridge into four bowls. Drizzle each serving generously with the fragrant spiced vegan butter.
