Espetadas (Madeiran Meat Skewers)

Large meat skewers, traditionally made with beef, seasoned with garlic and salt, and grilled over an open fire. A rustic and flavorful dish.

Ingredients

  • 2 lbs Beef cubes (sirloin or tenderloin)
  • 6 cloves Garlic
  • 4 Bay leaves
  • 2 tbsp Coarse sea salt
  • 2 tbsp Olive oil

Instructions

  1. 1In a bowl, crush the 6 cloves of garlic. Add the 2 tablespoons of coarse sea salt to the crushed garlic and mix them together to form a paste.
  2. 2Add the 2 pounds of beef cubes to the bowl with the garlic and salt mixture. Use your hands to rub the mixture all over every piece of beef, ensuring it is well coated.
  3. 3Carefully thread the seasoned beef cubes onto long metal skewers. Alternate each beef cube with one of the 4 bay leaves, placing a bay leaf between each piece of meat.
  4. 4Place the loaded skewers on a grill. Drizzle the 2 tablespoons of olive oil evenly over the skewers.
  5. 5Grill the skewers over high heat. Cook for approximately 8 to 10 minutes per side, turning occasionally, until the beef reaches an internal temperature of 135°F (57°C) for medium-rare, or your desired doneness.
  6. 6Remove the skewers from the grill and serve immediately.
