Ingredients

  • 1 lb Carne seca (dried beef), shredded
  • 2 lbs Cassava (yuca), peeled and cubed
  • 2 tbsp Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 can (14 oz) Diced tomatoes
  • 1/2 cup Coconut milk
  • 1/2 cup Green olives, sliced
  • 1/2 medium Bell pepper (green), chopped
  • 1/4 cup Cilantro, chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Boil the cassava in water until tender, about 20 minutes. Drain well and mash with coconut milk, salt, and pepper until smooth and creamy.
  2. 2While the cassava is cooking, heat olive oil in a large skillet over medium heat.
  3. 3Sauté the onion and bell pepper until softened, about 5 minutes.
  4. 4Add garlic and cook for 1 minute more.
  5. 5Stir in the shredded carne seca, diced tomatoes, and olives.
  6. 6Season with salt and pepper. Cook for 10 minutes, stirring occasionally.
  7. 7Preheat oven to 375°F (190°C).
  8. 8Spread the carne seca mixture evenly in a baking dish.
  9. 9Top with the mashed cassava, spreading it evenly over the meat filling.
  10. 10Bake for 20-25 minutes, or until the top is lightly browned.
  11. 11Garnish with chopped cilantro before serving.
