Ingredients

  • 1 lb Dried green split peas
  • 8 cups Vegetable broth
  • 12 oz Plant-based smoked sausage, sliced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 1 large Onion, chopped
  • 1 large Leek, sliced
  • 1 tsp Smoked paprika
  • 1 tsp Dried marjoram
  • 1 leaf Bay leaf
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Rinse the split peas in a colander.
  2. 2In a large pot or Dutch oven, combine the split peas, vegetable broth, plant-based sausage, carrots, celery, onion, leek, smoked paprika, marjoram, and bay leaf.
  3. 3Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the split peas are tender and the soup has thickened.
  4. 4Remove the bay leaf. Season with salt and pepper to taste. Serve hot.
