Ingredients

  • 1 lb Dried Split Peas
  • 8 cups Vegetable Broth
  • 1 lb Smoked Sausage (dairy-free)
  • 2 stalks Celery
  • 1 large Carrot
  • 1 large Onion
  • 1 large Leek
  • 2 Bay Leaves
  • 1 teaspoon Dried Marjoram
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions

  1. 1Rinse the split peas thoroughly.
  2. 2In a large pot, combine the split peas, vegetable broth, chopped celery, carrot, onion, and leek.
  3. 3Add the bay leaves, dried marjoram, salt, and pepper.
  4. 4Bring to a boil, then reduce heat and simmer for at least 2 hours, or until the peas are very soft and the soup has thickened.
  5. 5Slice the smoked sausage and add it to the soup during the last 30 minutes of cooking.
  6. 6Remove the bay leaves before serving.
  7. 7Serve the erwtensoep hot with a side of gluten-free bread.
