Ingredients

  • 1 lb Dried Green Split Peas
  • 8 cups Water
  • 2 cups Vegetable Broth
  • 1 lb Smoked Sausage (dairy-free)
  • 1 large Onion, chopped
  • 2 medium Carrot, diced
  • 2 stalks Celery, diced
  • 1 medium Leek, sliced
  • 2 Bay Leaf
  • 1 tsp Dried Marjoram
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1Rinse the split peas thoroughly.
  2. 2In a large pot or Dutch oven, combine split peas, water, vegetable broth, onion, carrot, celery, leek, bay leaf, and marjoram.
  3. 3Bring to a boil, then reduce heat and simmer for at least 1.5-2 hours, or until the split peas are very tender and the soup has thickened.
  4. 4While the soup is simmering, slice the smoked sausage and add it to the pot during the last 30 minutes of cooking.
  5. 5Remove the bay leaves before serving.
  6. 6Season with salt and pepper to taste. Serve hot.
