Empanadas de Pino (Beef Empanadas)

Ingredients

  • 2 cups All-purpose flour
  • 1/2 cup Vegetable shortening
  • 1 tsp Salt
  • 1/2 cup Water
  • 1 lb Ground beef
  • 1 medium Onion
  • 2 large Hard-boiled eggs
  • 1/4 cup Black olives
  • 1/4 cup Raisins
  • 1 tsp Ground cumin
  • 1/2 tsp Paprika
  • 1/2 cup Beef broth
  • 1 large Egg

Instructions

  1. 1Prepare the dough: In a large bowl, combine flour, shortening, and salt. Add water gradually and mix until a dough forms. Knead for 5 minutes and let it rest for 15 minutes.
  2. 2Prepare the pino: In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. 3Add diced onion, cumin, and paprika to the beef. Cook until the onion is translucent.
  4. 4Stir in beef broth and simmer for 15 minutes, allowing the flavors to meld.
  5. 5Roll out the dough and cut into circles.
  6. 6Place a spoonful of the beef mixture in the center of each circle. Add a quarter of a hard-boiled egg, a couple of black olive slices, and a few raisins.
  7. 7Fold the dough over to form a half-moon shape. Crimp the edges to seal.
  8. 8Brush the empanadas with egg wash.
  9. 9Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until golden brown.
