Egyptian Ta'ameya (Falafel)

Crispy and flavorful falafel made with fava beans instead of chickpeas, a traditional Egyptian breakfast. Uses ground flaxseed to bind instead of egg.

Ingredients

  • 1 cup Dried fava beans
  • 1/2 medium Onion
  • 3 cloves Garlic
  • 1/4 cup Fresh parsley
  • 1/4 cup Fresh cilantro
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1/2 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 tablespoon Ground flaxseed
  • 3 tablespoons Water
  • 1 cup Vegetable oil

Instructions

  1. 1Soak the dried fava beans in water overnight.
  2. 2Drain and rinse the soaked fava beans.
  3. 3In a food processor, combine the fava beans, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, and salt.
  4. 4Process until a coarse paste forms.
  5. 5Mix ground flaxseed with water and let sit for 5 minutes until a gel forms.
  6. 6Add the flaxseed gel to the fava bean mixture and mix well.
  7. 7Shape the mixture into small patties or balls.
  8. 8Heat vegetable oil in a deep skillet or pot over medium-high heat.
  9. 9Fry the falafel for 3-4 minutes per side, or until golden brown and crispy.
  10. 10Drain on paper towels and serve hot.
