Egyptian Spiced Chicken and Rice

Ingredients

  • 1.5 lbs Chicken Thighs
  • 1 cup Basmati Rice
  • 2 cups Chicken Broth
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 tbsp Olive Oil
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 0.5 tsp Turmeric
  • 0.25 tsp Cinnamon
  • 0.75 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Fresh Parsley

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add chopped onion and garlic and saute until softened, about 5 minutes.
  3. 3Add chicken thighs to the skillet and brown on all sides.
  4. 4Stir in cumin, coriander, turmeric, cinnamon, salt, and pepper. Cook for 1 minute.
  5. 5Add basmati rice and chicken broth to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
