Ingredients

  • 1 lb Fresh Okra
  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 4 cloves Garlic
  • 28 oz Crushed Tomatoes
  • 1 cup Vegetable Broth
  • 1 teaspoon Coriander
  • 0.5 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions

  1. 1Wash and trim the okra. Cut into 1-inch pieces.
  2. 2Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened.
  3. 3Add minced garlic, coriander, and cumin. Cook for 1 minute.
  4. 4Add crushed tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. 5Add the okra to the pot and cook for another 20 minutes, or until okra is tender.
  6. 6Season with salt and pepper.
  7. 7Serve hot with rice or pita bread.
