Egyptian Ful Medames with Tahini and Lemon

A classic Egyptian breakfast/lunch dish made with stewed fava beans, tahini, lemon juice, and spices. Perfect with pita bread.

Ingredients

  • 1 cup Dried Fava Beans
  • 6 cups Water
  • 4 cloves Garlic
  • 1 tsp Cumin
  • 1/2 tsp Paprika
  • 2 tbsp Lemon Juice
  • 2 tbsp Tahini (Sesame Paste)
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 cup Fresh Parsley
  • 4 pieces Pita Bread

Instructions

  1. 1Soak the fava beans in water overnight.
  2. 2Drain the fava beans and place them in a pot with fresh water. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the beans are very tender.
  3. 3Mash some of the beans to create a creamy texture.
  4. 4Add garlic, cumin, paprika, lemon juice, tahini, olive oil, salt, and pepper to the pot. Stir well to combine.
  5. 5Simmer for another 10 minutes to allow the flavors to meld.
  6. 6Garnish with fresh parsley and serve hot with pita bread.
