Egyptian Ful Medames with Pita

A classic Egyptian breakfast or lunch of stewed fava beans, seasoned with garlic, lemon juice, and spices, served with warm pita bread.

Ingredients

  • 1 lb Dried fava beans
  • 6 cups Water
  • 4 cloves Garlic
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 4 pieces Pita bread
  • 2 tablespoons Chopped parsley

Instructions

  1. 1Soak the fava beans in water overnight.
  2. 2Drain the fava beans and place them in a large pot. Add 6 cups of fresh water.
  3. 3Bring to a boil, then reduce heat and simmer for 1-2 hours, or until the beans are very tender.
  4. 4Mash some of the beans to create a creamy texture.
  5. 5Stir in minced garlic, lemon juice, olive oil, cumin, paprika, salt, and pepper.
  6. 6Heat through. Serve hot, garnished with chopped parsley, with warm pita bread.
