Egyptian Ful Medames (Fava Bean Stew)

Ful Medames is a traditional Egyptian breakfast or dinner dish made with stewed fava beans, garlic, lemon juice, and olive oil. A hearty and flavorful vegan meal.

Ingredients

  • 1 cup Dried fava beans
  • 6 cups Water
  • 4 cloves Garlic
  • 0.25 cup Lemon juice
  • 0.25 cup Olive oil
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Chopped parsley (for garnish)

Instructions

  1. 1Soak fava beans in water overnight.
  2. 2Drain and rinse fava beans. Place in a pot with 6 cups of fresh water.
  3. 3Bring to a boil, then reduce heat and simmer for 2-3 hours, or until fava beans are very tender.
  4. 4Mash the fava beans slightly with a potato masher or fork.
  5. 5Stir in minced garlic, lemon juice, olive oil, cumin, salt, and pepper.
  6. 6Simmer for another 10 minutes.
  7. 7Serve hot, garnished with chopped parsley. Serve with gluten-free bread and boiled eggs (optional).
