Egyptian Ful Medames (Fava Bean Stew)

Ingredients

  • 1 cup Dried Fava Beans
  • 1/2 medium Onion
  • 3 cloves Garlic
  • 2 tbsp Lemon Juice
  • 1 tsp Cumin
  • 2 tbsp Olive Oil
  • 4 pieces Pita Bread
  • 6 cups Water

Instructions

  1. 1Soak fava beans in water overnight.
  2. 2Drain and rinse fava beans.
  3. 3Place fava beans in a pot with water. Add onion.
  4. 4Bring to a boil, then reduce heat and simmer for 1-2 hours, or until beans are very tender.
  5. 5Mash some of the beans with a fork to create a creamy texture.
  6. 6Stir in garlic, lemon juice, cumin, and olive oil.
  7. 7Season with salt and pepper to taste.
  8. 8Serve hot with pita bread.
