Egyptian Fava Bean Stew (Ful Medames)

A traditional Egyptian breakfast or dinner featuring slow-cooked fava beans, seasoned with cumin, lemon juice, and olive oil. This simple yet flavorful dish is naturally peanut-free.

Ingredients

  • 1 cup Dried fava beans
  • 6 cups Water
  • 2 cloves Garlic
  • 2 tbsp Lemon juice
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Chopped parsley

Instructions

  1. 1Rinse the fava beans and soak them in water overnight or for at least 8 hours.
  2. 2Drain the fava beans and place them in a pot with fresh water.
  3. 3Bring to a boil, then reduce heat to low, cover, and simmer for 1-2 hours, or until the beans are very tender.
  4. 4Mash some of the beans to create a thicker consistency.
  5. 5Stir in minced garlic, lemon juice, olive oil, cumin, salt, and pepper.
  6. 6Serve hot, garnished with chopped parsley.
