Egyptian Fava Bean Falafel (Ta'ameya)

Ingredients

  • 1 cup Dried fava beans, soaked overnight
  • 1/2 cup Fresh cilantro
  • 1/2 cup Fresh parsley
  • 2 stalks Green onions
  • 4 cloves Garlic
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 2 cups Vegetable oil, for frying

Instructions

  1. 1Drain and rinse the soaked fava beans.
  2. 2In a food processor, combine the fava beans, cilantro, parsley, green onions, garlic, cumin, coriander, baking powder, and salt.
  3. 3Process until a coarse paste forms. Do not over-process.
  4. 4Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. 5Shape the falafel mixture into small patties or balls.
  6. 6Carefully drop the falafel into the hot oil and fry for 3-4 minutes, or until golden brown and crispy.
  7. 7Remove the falafel from the oil and drain on paper towels.
  8. 8Serve hot with tahini sauce or in a gluten-free wrap with your favorite toppings.
