- 4Once the fava beans are very tender, drain the beans, reserving about 1/2 cup of the cooking liquid. Transfer the drained beans to a blender or food processor.
- 5Add the chopped 1/2 medium Onion, minced 2 cloves Garlic, chopped 1/4 cup Fresh Parsley, chopped 1/4 cup Fresh Cilantro, and chopped 1/4 medium Green Bell Pepper to the blender with the beans. Add the 1 teaspoon Cumin, 1/2 teaspoon Dried Mint, 2 tablespoons Olive Oil, 1/2 teaspoon Salt, and 1/4 teaspoon Black Pepper. Add 2 tablespoons of the reserved cooking liquid.
