Ingredients

  • 1 cup Sweet potato, cooked and mashed
  • 1 1/2 cups All-purpose flour
  • 2 tablespoons Tapioca starch
  • 2 tablespoons Sugar
  • 1/4 teaspoon Salt

Instructions

  1. 1In a large bowl, combine mashed sweet potato, flour, tapioca starch, sugar, and salt.
  2. 2Mix until a dough forms. It should be slightly sticky.
  3. 3Lightly flour a work surface.
  4. 4Roll the dough into a long log about 1 inch thick.
  5. 5Cut the log into 1-inch pieces.
  6. 6Bring a large pot of salted water to a boil.
  7. 7Drop the dumplings into the boiling water. Cook for 3-4 minutes, or until they float to the surface.
  8. 8Remove the dumplings with a slotted spoon and serve with melted butter or dairy-free yogurt.
