Dutch Cauliflower Stamppot with Smoked Sausage

Ingredients

  • 1 large head Cauliflower florets
  • 6 cups Kale
  • 1 lb Smoked sausage (Kielbasa)
  • 1 medium Onion
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Butter
  • 1/4 cup Heavy cream
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Steam the cauliflower florets until tender, about 15-20 minutes.
  2. 2While the cauliflower is steaming, sauté the chopped onion in butter until softened.
  3. 3Add the kale to the pan and cook until wilted.
  4. 4Slice the smoked sausage and add it to the pan, cooking until lightly browned.
  5. 5Once the cauliflower is cooked, mash it with a potato masher or fork.
  6. 6Stir in the sautéed onion, kale, sausage, Dijon mustard, and heavy cream into the mashed cauliflower.
  7. 7Season with salt and pepper to taste. Serve hot.
