Ingredients

  • 8 Chicken drumsticks
  • 8 pieces Injera bread
  • 2 large Red onions
  • 6 cloves Garlic
  • 2 tablespoons Ginger
  • 4 tablespoons Berbere spice blend
  • 1/4 cup Niter Kibbeh alternative (dairy-free)
  • 1 can Coconut milk
  • 4 Hard-boiled eggs
  • 1 cup Chicken broth
  • 1 teaspoon Salt

Instructions

  1. 1In a large pot, sauté chopped red onions, garlic, and ginger in the Niter Kibbeh alternative until softened.
  2. 2Add the berbere spice blend and cook for another minute, stirring constantly.
  3. 3Add the chicken drumsticks and brown on all sides.
  4. 4Pour in the chicken broth and coconut milk. Bring to a simmer, then reduce heat and cover.
  5. 5Simmer for 1-1.5 hours, or until the chicken is very tender and falling off the bone.
  6. 6Season with salt to taste.
  7. 7Serve hot with injera bread and hard-boiled eggs.
