Doro Wat (Chicken Stew)

Ingredients

  • 8 Chicken drumsticks
  • 3 medium Red onions
  • 4 tablespoons Berbere spice blend
  • 1/2 cup Niter Kibbeh (Spiced Clarified Butter)
  • 6 cloves Garlic
  • 1 tablespoon Ginger
  • 4 Hard-boiled eggs
  • 2 cups Chicken broth
  • Injera (Ethiopian flatbread)

Instructions

  1. 1Finely chop the red onions and mince the garlic and ginger.
  2. 2In a large pot, sauté the onions in niter kibbeh over medium heat until softened and slightly browned, about 15 minutes.
  3. 3Add the garlic and ginger and cook for another 2 minutes.
  4. 4Stir in the berbere spice blend and cook for 1 minute, stirring constantly.
  5. 5Add the chicken drumsticks and chicken broth to the pot.
  6. 6Bring to a simmer, then reduce heat to low, cover, and cook for 1 hour, or until the chicken is very tender.
  7. 7Add the hard-boiled eggs to the stew during the last 15 minutes of cooking.
  8. 8Serve hot with injera on the side.
