Dirty Rice with Ground Turkey

Ingredients

  • 1 lb Ground turkey
  • 1.5 cups Long-grain rice
  • 3 cups Chicken broth
  • 1 medium Onion, diced
  • 1 medium Bell pepper, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tsp Worcestershire sauce
  • 1/2 tsp Hot sauce
  • 1 tbsp Olive oil
  • 1/4 cup Green onions, sliced
  • 4 oz Chicken livers, chopped (optional)

Instructions

  1. 1Place a 12-inch skillet over medium heat (350°F/175°C). Add the 1 tablespoon of olive oil.
  2. 2Add the 1 lb of ground turkey to the hot skillet. Cook, breaking it apart with a spoon, until it is browned all over, about 5-7 minutes. Carefully drain off any extra fat from the skillet.
  3. 3Add the 1 medium onion, diced; the 1 medium bell pepper, diced; and the 2 stalks of celery, diced, to the skillet with the turkey. Cook, stirring often, until the vegetables are soft, about 5 minutes.
  4. 4Add the 3 cloves of garlic, minced, and the 2 tablespoons of Cajun seasoning to the skillet. Stir constantly for 1 minute until fragrant.
  5. 5Add the 1.5 cups of long-grain rice to the skillet. Stir for 1 minute to coat the rice grains with the turkey and vegetable mixture.
  6. 6Pour in the 3 cups of chicken broth. Add the 1 teaspoon of Worcestershire sauce and the 1/2 teaspoon of hot sauce. Stir everything together and bring the liquid to a boil.
  7. 7Once boiling, reduce the heat to low. Cover the skillet tightly with a lid and let it simmer for 20-25 minutes, or until the rice is tender and all the liquid has been absorbed. If using, stir in the 4 oz of chicken livers, chopped, during the last 10 minutes of simmering.
  8. 8Remove the skillet from the heat. Stir in the 1/4 cup of green onions, sliced. Let the dish rest, covered, for 5 minutes before serving hot.
