Dirty Rice (Gluten-Free)

Ingredients

  • 1 lb Ground pork
  • 6 cups Cooked white rice
  • 4 oz Chicken livers
  • 1 large Onion
  • 1 large Green bell pepper
  • 2 stalks Celery
  • 4 cloves Garlic
  • 2 cups Chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon Hot sauce
  • 2 tablespoons Olive oil

Instructions

  1. 1Heat the 2 tablespoons of olive oil in a large 12-inch skillet over medium heat, which is 350°F (175°C).
  2. 2Add the 1 lb of ground pork and the 4 oz of chicken livers to the skillet. Cook, breaking them apart with a spoon, until the pork is browned and the chicken livers are no longer pink, about 8-10 minutes. The internal temperature of the chicken livers should reach 165°F (74°C).
  3. 3Add the 1 large onion, 1 large green bell pepper, and 2 stalks of celery to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  4. 4Add the 4 cloves of garlic to the skillet and cook, stirring constantly, until you can smell its fragrance, about 1 minute.
  5. 5Stir in the 6 cups of cooked white rice, 2 cups of chicken broth, 2 tablespoons of Cajun seasoning, and 1 teaspoon of hot sauce. Mix everything together until well combined.
  6. 6Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and cook for 15-20 minutes, stirring occasionally, until most of the liquid has been absorbed and the rice is tender.
  7. 7Serve the dirty rice hot.
