Date-Stuffed Ma'amoul Cookies (Semolina)

Ingredients

  • 2 cups Semolina Flour
  • 0.5 cup All-Purpose Flour
  • 1 cup Unsalted Butter
  • 0.25 cup Powdered Sugar
  • 2 tablespoons Orange Blossom Water
  • 1 cup Date Paste
  • 1 teaspoon Ground Cinnamon
  • 0.25 teaspoon Ground Cloves
  • 2 for dusting Powdered Sugar

Instructions

  1. 1In a large bowl, combine semolina flour, all-purpose flour, powdered sugar, and softened butter.
  2. 2Rub the butter into the flour until the mixture resembles coarse crumbs.
  3. 3Add orange blossom water and mix until a dough forms.
  4. 4Cover the dough and let it rest for at least 30 minutes.
  5. 5In a separate bowl, combine date paste, ground cinnamon, and ground cloves.
  6. 6Roll the date paste into small balls.
  7. 7Pinch off a small piece of dough and flatten it into a disc. Place a date ball in the center and wrap the dough around it, sealing the edges tightly.
  8. 8Shape the cookie into a ball or use a ma'amoul mold to create decorative patterns.
  9. 9Preheat oven to 350°F (175°C).
  10. 10Place the cookies on a baking sheet lined with parchment paper.
  11. 11Bake for 20-25 minutes, or until lightly golden.
  12. 12Let the cookies cool completely, then dust with powdered sugar.
