Ingredients

  • 2 cups All-purpose flour
  • 1/2 cup Fine Semolina
  • 1/2 cup Coconut oil
  • 1/4 cup Powdered sugar
  • 2 tablespoons Orange blossom water
  • 1 tablespoon Rose water
  • 1 cup Pitted dates (Medjool preferred)
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground cloves

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2In a large bowl, combine flour, semolina, coconut oil, and powdered sugar.
  3. 3Mix well until the mixture resembles breadcrumbs.
  4. 4Add orange blossom water and rose water, mixing until a dough forms.
  5. 5In a separate bowl, mash dates with cinnamon and cloves until it forms a paste.
  6. 6Take a small amount of dough and flatten it in your palm. Place a small ball of date paste in the center.
  7. 7Gently fold the dough around the filling and shape into a cookie. Use a ma'amoul mold if available.
  8. 8Place cookies on a baking sheet lined with parchment paper.
  9. 9Bake for 18-20 minutes, or until lightly golden.
  10. 10Let cool completely before serving.
