Ingredients

  • 1.5 cups Fine Semolina Flour
  • 0.5 cup All-Purpose Flour
  • 0.75 cup Vegan Butter
  • 0.25 cup Powdered Sugar
  • 2 tbsp Orange Blossom Water
  • 3 tbsp Water
  • 1 cup Pitted Dates
  • 0.5 tsp Cinnamon
  • 1 tsp Vegan Butter
  • 2 tbsp Powdered Sugar

Instructions

  1. 1In a bowl, combine semolina flour, all-purpose flour, and powdered sugar.
  2. 2Rub in the vegan butter until the mixture resembles coarse crumbs.
  3. 3Add orange blossom water and cold water, mix until a dough forms. Do not overmix.
  4. 4Cover the dough and let it rest in the refrigerator for at least 30 minutes.
  5. 5Meanwhile, prepare the filling: In a food processor, blend dates and cinnamon until a smooth paste forms.
  6. 6Preheat oven to 350°F (175°C).
  7. 7Divide the dough into small balls. Flatten each ball and place a small amount of date filling in the center.
  8. 8Bring the edges of the dough together to enclose the filling and form a ball or use a Maamoul mold.
  9. 9Place the cookies on a baking sheet lined with parchment paper.
  10. 10Brush the tops with melted vegan butter.
  11. 11Bake for 15-20 minutes, or until lightly golden.
  12. 12Let cool completely on a wire rack before dusting with powdered sugar.
