Date-Stuffed Ma'amoul Cookies (Dairy-Free)

Ingredients

  • 2 cups All-purpose flour
  • 1/2 cup Semolina flour
  • 1 cup Vegan butter, cold and cubed
  • 2 tablespoons Orange blossom water
  • 1 tablespoon Rose water
  • 1/2 teaspoon Ground cinnamon
  • 1 cup Pitted dates
  • 2 tablespoons Vegan Butter
  • 1/4 teaspoon Ground cloves

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2In a large bowl, combine all-purpose flour, semolina flour, and vegan butter. Rub the vegan butter into the flour until the mixture resembles coarse crumbs.
  3. 3Add orange blossom water, rose water, and cinnamon. Mix until a dough forms.
  4. 4For the filling, blend dates with vegan butter and cloves until smooth.
  5. 5Take a small amount of dough and flatten it into a circle. Place a small amount of date filling in the center. Bring the edges of the dough together to enclose the filling and shape into a ball or use a ma'amoul mold.
  6. 6Place the cookies on a baking sheet lined with parchment paper.
  7. 7Bake for 20-25 minutes, or until lightly golden.
  8. 8Let cool completely before serving.
