Ingredients

  • 2 cups All-purpose flour
  • 1/2 cup Semolina flour
  • 1 cup Unsalted butter, softened
  • 1/4 cup Powdered sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Mahlab (optional)
  • 2 tablespoons Rose water
  • 1 cup Dates, pitted and chopped
  • 2 tablespoons Sunflower seed butter
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Cardamom

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2In a large bowl, combine all-purpose flour, semolina flour, butter, powdered sugar, baking powder, and mahlab (if using). Mix until a crumbly dough forms.
  3. 3Add rose water and mix until the dough comes together.
  4. 4In a separate bowl, combine chopped dates, sunflower seed butter, cinnamon, and cardamom.
  5. 5Take a small amount of dough and flatten it in your palm. Place a small amount of date filling in the center and shape the dough around the filling to form a cookie.
  6. 6Place the cookies on a baking sheet lined with parchment paper.
  7. 7Bake for 20 minutes, or until lightly golden.
  8. 8Let cool completely before serving.
